What is Kaga Yasai?
Kaga Yasai (Kaga vegetable) is the generic name for 15 different kinds of vegetables that have been cultivated in the suburb of Kanazawa since 1945. They include Kaga Renkon (Kaga lotus root), Kinji-sou (also called Suizenji-na, Okinawan spinach), and Gensuke Daikon (Gensuke radish). These vegetables are reputed to have been essential ingredients in Kaga cuisine from the old time. Thanks to recent publicity, Kaga vegetables are gaining increasing recognition throughout Japan, being ranked alongside Kyo-Yasai (Kyoto Vegetables). You can buy them at Omicho Market in Kanazawa and they are marked with certificate of authenticity stickers.
